Maple Sugar, Maple Cream, Maple Candy, 
& Other Maple Products

There are many tasty products made with pure maple syrup. Traditional products include maple sugar, maple cream, maple candy, maple fudge & sugar on snow. These tasty treats can often be bought from Vermont Maple sugarmakers or from other maple retailers throughout Vermont.


Maple Sugar

Maple sugar was produced first by Native Americans.  Maple sugar can be used in cooking instead of cane sugar, as a topping on baked goods, or sprinkled on cereal & fruit to add a wpnderful flavor.

Granulated Maple Sugar is made by boiling maple syrup until the temperature reaches 260° F then immediately stirred until it granulates. The sugar is sifted to make a uniformly sized product.  Larger pieces can be great to eat or used in hot cereals.

Maple Cream

Maple Cream is made from 100% maple syrup and contains no dairy products. It is wonderful when used on toast, doughnuts & muffins.

Maple Cream is made by boiling maple syrup to 232° F  then rapidly cooling the cooked syrup to room temperature. The syrup is then slowly stirred until it develops a smooth texture. 


Maple Confections

Maple Fudge is made by boiling maple syrup to 235° F It is then cooled to 160°, then stirred with a spoon till it lightens in color, thickens slightly, and poured into a buttered dish or pan.

Maple Sugar Cakes (candy) are made by boiling syrup to 244° F.  Then cool to 200° F  The syrup is then stirred, either by hand with a spoon or with a commercial maple sugar candy machine.  It is poured or into food grade specially shaped rubber, silicone or metal molds of different shapes & sizes.

Hard Maple Sugar (block sugar) is made by heating syrup to 246° F , cooled to 210 & stirred till it lightens in color, poured into molds of various sizes and cooled. It can be shaved with a carrot peeler or knife, broken into chunks for a snack or used in cooking.  Add it to your favorite baked beans recipe!

Maple Coated Nuts are a delicious treat. Nuts can roasted and then coated with heated syrup and allowed to dry. Another method is to boil about 3/4" of syrup in a deep saucepan until the syrup spins a fine thread when dripped from a spoon (about 255 degrees) remove from heat and add a couple of cups of your your favorite nuts.  Stir.  It will quickly thicken and suddenly become dry.  Pour the nuts out onto a cookie sheet and break them apart with the spoon. 


There are many other products which can be made with maple syrup or sugar such as: maple salad dressings, maple cotton candy, maple jelly, maple popcorn, maple lollipops, maple vinegar, maple seasonings and more!


Make Your Own Maple Treats!

Cooking with maple syrup is easy so experiment with your favorite recipes. You can substitute maple syrup for cane sugar.  When a recipe calls for 1 cup of granulated sugar, use 3/4 of a cup of maple syrup. Add 1/2 tsp baking soda and reduce the oven temperature by 25 degrees.
