Maple Pumpkin Stuffed French Toast

Makes 6 servings

8 oz cream cheese 

1 1/4 cup pumpkin

4 tablespoons Maple Cream

12 slices of your favorite bread

6 eggs

1 cup milk

1/2 cup pumpkin

1/2 cup syrup

1 teaspoon allspice

1/2 teaspoon ginger

Preheat oven to 375°. For filling, combine cream cheese, maple cream and 3/4 cup pumpkin, set aside. Butter bottom of 9 x 13″ pan. Lay 6 slices of bread in single layer in pan. Cover with filling, then add 6 slices on top. In medium size mixing bowl, combine eggs, milk 1/2 cup pumpkin, syrup, allspice and ginger. Bake covered for 25-30 minutes and an additional 30 minutes uncovered on until set.
