  1. In a bowl, mix together almond milk, vanilla, sugar, and baking powder. Then, mix in the flour.
  2. Spray a skillet with coconut oil or add a little vegan butter to a skillet and heat it to medium.
  3. When the oil or butter is warm, pour 2 Tbsp of batter into the pan and sprinkle a few blueberries on top. Cook until bubbles start to form in the pancake and then flip. Cook each pancake until golden brown. Top with your favorite grade of pure maple syrup!
