 
  Smashed Chickpea Salad
This smashed chickpea salad can be used as a sandwich filling or eaten atop a pile of fresh greens. A great lunch or light dinner alternative with a splash of maple syrup! This recipe originally comes to us from the folks at minimalistbaker.com, who incorporate maple syrup into many of their creations.
 
  What You’ll Need
Instructions
- In a medium bowl, lightly mash chickpeas with a fork or potato masher (or whatever works for you).
- Add mayo (or tahini), mustard, maple syrup, red onion, dill, salt and pepper, and mix well.
- Taste and adjust for flavor, adding more maple for sweetness or more mustard for some extra zing.
- Serve as a sandwich filling on your favorite bread or atop a fresh pile of greens.
Tips
