Smashed Chickpea Salad

This smashed chickpea salad can be used as a sandwich filling or eaten atop a pile of fresh greens. A great lunch or light dinner alternative with a splash of maple syrup! Instructions

  1. In a medium bowl, lightly mash chickpeas with a fork or potato masher (or whatever works for you).
  2. Add mayo (or tahini), mustard, maple syrup, red onion, dill, salt and pepper, and mix well.
  3. Taste and adjust for flavor, adding more maple for sweetness or more mustard for some extra zing.
  4. Serve as a sandwich filling on your favorite bread or atop a fresh pile of greens.

Tips

  1. For a litte crunch in your salad, add some roasted sunflower seeds.
