Maple Ginger Habanero Popsicles

Makes 8 Popsicles 

  • 3 cups water
  • 1 cup pure maple syrup
  • 1 inch piece of ginger chopped
  • 1 habanero sliced

Combine water, ginger and habanero in a medium saucepan and bring to a boil. Turn down heat and let simmer for 20 minutes. Add syrup, stir, then let cool. Once ingredients have cooled, pour into popsicle molds leaving 1/4 inch -1/2 inch space on top to allow for expansion during freezing. Freeze for 6-8 hours or overnight.
