Maple Switchel

This recipe adapted slightly from a creation by the team at Bourdon Maple Farm in Woodstock as their twist on an historic New England beverage.

Ingredients:
2" piece of fresh ginger, roughly chopped
2 cups water
1/3 cup apple cider vinegar
1/4 cup Vermont maple syrup
1 fresh lemon, cut in half

Instructions:

In a small saucepan, bring ginger and water to a boil. Boil for 2 minutes and then remove from heat and let the mixture steep for 20 minutes. Pour the mixture into a 32 oz mason jar (or similar lidded container) and add the remaining ingredients. Let cool for 10 minutes, covered loosely, then seal and refrigerate for 24 to 36 hours. 

This leaves you with a concentrated switchel mixture that you can drink daily as a "wellness shot" to get you going! You can also mix with water (1 part switchel concentrate to 4 parts water) for a refreshing drink! Either way, strain before serving. Once you've got the basic recipe down, experiment with seasonal fruit and herbs to add a twist.
