Gluten Free & Vegan Blueberry Pancakes

Recipe from Peanut Butter and Jilly

Ingredients:
1 cup almond milk
1 tsp vanilla
2 tsp baking powder
1 tbsp sugar
1 cup all purpose flour
½ cup blueberries

Instructions:

1) In a bowl, mix together your almond milk, vanilla, sugar, and baking powder together. Then, mix in the flour.

2) Spray a skillet with coconut oil or add a little vegan butter to a skillet and heat it to medium. When the oil or butter is warm, pour 2 tbsp of batter into the pan and sprinkle a few blueberries on top. Cook until bubbles start to form in the pancake and then flip. Cook each pancake until golden brown.
