Maple Lemonade Popsicles

Makes 8 Popsicles

  • ¾ cup lemon juice from fresh squeezed lemons
  • 1 ¼ cup water
  • ¼ cup pure maple syrup
  • 1 ½ teaspoons of finely chopped mint leaves

Combine all ingredients in a bowl. You can adjust amounts of lemon and maple to personal preference of tart/sweet ratio. Pour into popsicle molds leaving 1/4 – 1/2 inch space on top to allow for expansion in freezing process. Freeze for 6-8 hours or overnight.
