Maple Peanut Butter Oatmeal Muffins

Makes 12 medium sized muffins

  • 1 cup rolled oats
  • 3/4 cup flour
  • 1/4 cup flax meal
  • 1/2 cup peanut butter (we used chunky)
  • 1/2 cup pure maple syrup
  • 2 ripe bananas
  • 2 eggs
  • 2 tablespoons shredded coconut
  • 1 teaspoon baking powder
  • 1/4 teaspoon cinnamon
  • 1/8 teaspoon nutmeg

Preheat oven to 350°F.

Line muffin pan with baking cup liners or lightly grease pan. Combine all ingredients in large mixing bowl. Fill muffin cups 2/3 full. Bake for 15-20 minutes.
